As part of our collection of budget friendly meal idea’s, Cyndi shares the recipe of her cheap and yummy Lemon Tomato Pasta.
Lemon Tomato Pasta
- 2 lemons
- 2 large cans of diced tomatoes
- Salt, pepper, garlic flakes to season
- 1 bag of pasta
Slowly heat the canned tomatoes. Add a teaspoon of sugar to brighten the flavour. Allow to simmer gently for as long as you can as the flavour deepens the longer it simmers. Add the seasoning and taste.
Zest and juice one lemon and add it to the tomato sauce. Taste and see if it’s lemony enough for you. If not add more zest and taste again.
Cook your favourite pasta and serve with hot buttered rolls if your budget allows.
This shouldn’t cost more than $6 or $7 (it can even be close to free if you have your own tomatoes and lemons).
